Zucchini and Red Onion Sauté

Servings: 4-6

Ingredients

  • 1 tablespoon olive oil
  • 1 large thinly sliced red onion
  • 3 cloves minced garlic
  • 4 medium cut into rounds zucchini
  • 1 8-ounce can tomato sauce

Directions

In a large skillet, heat the olive oil over medium-high heat. Add the onions and garlic. Cook until the onions are tender, 3 to 4 minutes. Add the zucchini and cook until the zucchini is almost tender, 4 to 5 minutes. Stir in the tomato sauce and cook until the mixture is heated through. Serve immediately.

This was delicious! I'm definitely going to keep this recipe on file for the summer when our zucchini are so bountiful. Easy as well.

I added smoked sausage, but it was hard to keep lit.
