Ingredients

  • 3 tablespoons white wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 3 peeled and thinly sliced (about 2 lbs) cucumbers
  • 1 (10 oz) container sliced in half grape tomatoes
  • 1/2 medium very thinly sliced into half moons Vidalia onion
  • 2 tablespoons chopped dill
  • to taste kosher salt
  • freshly ground, to taste black pepper

Directions

In a large bowl, whisk together the vinegar, olive oil and sugar.

Toss in the cucumbers, tomatoes, onion and dill, and season with salt and pepper. Let marinate at room temperature for 20 minutes before serving.

Really one of THE best cucumber salads I have ever had. I had to use dry dill. Remember to use only a little if you have to do that. A teaspoon or 1 -1/2 teaspoons is plenty, adjust to taste.

This salad is great. I made it for the first time today. It is very similar to a salad my great granny used to make often, especially in the summer. Clean, crisp flavor and not overly dressed. Thank you Paula for keeping these great old recipes alive. Adding the dill gives this time honored classic a fresh new twist.
