Tracie’s Couscous Salad

Ingredients

  • 1 box cooked couscous (garlic parmesan)
  • 1 can chick peas
  • 1 finely chopped red pepper
  • 1/2 chopped Vidalia onion
  • 1 peeled and seeded, finely chopped English cucumber
  • 1 chopped tomato
  • 1/4 cup chopped fresh parsley
  • 2 to 3 juiced limes
  • 1/4 cup olive oil
  • 1/2 cup crumbled feta cheese

Directions

In a bowl, add all ingredients. Toss and add oil or lime juice to taste.
