The Lady & Sons Prickly Pear Mojito

Ingredients
- 8 mint leaves, plus more for garnish
- juice from ½ a lime
- 2 ounces prickly pear purée
- 1½ ounces light rum, optional
- 2½ ounces soda water or lemon-lime soda (4 ounces if omitting the rum)
Directions
Muddle mint in a glass. Add in lime juice, ice, rum, prickly pear purée and soda to glass. Stir.
Garnish with fresh mint leaves.
