This is a delicious dish! I was surprised how well it turned out. I made it because I had everything, but I, too, thought it would be too tomatoe-y. Because of that, I modified it just slightly by deglazing the veggies with white wine, and adding a little chicken broth to the reduction. I made it in the stove top in a cast iron pot, and it reduced quite a bit in an hour while I made some dessert and cooked the rice. It seemed to turn orange when the shrimp was added. The flavor was amazing for such a simple recipe ... And the texture of the tomato mixture was like velvet. The green onions are an essential contrast with their spicy crunchiness. Will make again and again!
