Sausage Gravy Fries

Ingredients
- 2 lbs sliced into 1/4-inch thick discs russet potatoes
- 1 teaspoon vegetable oil
- 1 lb loose breakfast sausage
- 1 chopped red bell pepper
- 1 chopped yellow onion
- 2 tablespoons butter
- 1/2 cup flour
- 3 1/2 cups milk
- 1 cup grated cheddar
- 1 cup sour cream
- 1 cup fried onions
- Paula Deen Hot Sauce
Directions
Preheat fryer to 300 °F and preheat oven to 200 °F.
Slice potatoes into 1/4â thick discs. Par cook them in 300 °F oil, remove, then fry again at 375 °F until golden brown. Place on a paper towel-lined baking sheet then into a 200 °F oven to keep warm.
Warm vegetable oil in a large high-sided skillet over medium-high heat. Add sausage and cook for 5 minutes, or until browned. Add red bell pepper, onion and butter. Cook until vegetables are softened, about 3 minutes.
Stir in the flour to coat the sausage and pepper mixture and add salt and pepper. Add the milk slowly, stirring constantly to eliminate any lumps. Stir in 2 cups cheddar cheese.
To serve, pour the gravy over the potato discs and top with additional cheese, sour cream, fried onions and Paula Deen Hot Sauce.
