Ingredients

  • 2 fillets flaked canned salmon
  • 1 beaten egg
  • 2 tablespoons sliced green onion
  • 1/2 cup breadcrumbs
  • for frying vegetable oil

Directions

Over medium heat, heat oil in a medium skillet. Combine canned salmon, beaten egg, green onions and 1/4 cup bread crumbs. Form into patties and dust with additional bread crumbs. Fry until golden brown, about 2 minutes on each side.

These are delicious! I've made something similar before. I'm from the south too, and we called them salmon patties. I've added preferably, chopped Vidalia onion and sometimes I would add chopped celery if I had some on hand. I would add 2 or 3 eggs, I would actually bread mine in corn meal and fry until golden brown. So many variations of salmon patties/croquettes. An extra way to make two cans of salmon go farther with a large family/crowd! I love you Paula! You Rock!

great, I added about 1/2 tsp of baking soda for extra crunch to the patties and they turned out perfect. All of your recipes are ourstanding and never need any additions. I just tried the soda to see if they would get a little crunchier and it worked. Thanks Paula, your Perfect as usual, ps, I LOVED YOU ON DANCING WITH THE STARS!! One regular size can folks. Plus you might add 1T mayo to help hold together and season with old bay seasoning. This is the BEST recipe!
