Raisin Cookies

Ingredients
- 2 cups golden raisins
- 1 cup water
- 1 cup oil
- 1½ cups sugar
- 2 eggs
- 3 cups flour
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
Directions
Preheat oven to 350˚F.
Boil raisins and water together until all water is absorbed then set aside to cool.
In a large bowl, cream together the oil and sugar. Then, add the eggs, flour, salt, vanilla extract, and baking soda, and mix until smooth. Add the raisin mixture and stir. Next, roll dough into small balls and then roll balls in sugar. Place on un-greased cookie sheets 2 inches apart and bake for 15 minutes.
