Quick Collard Green Sauté

Ingredients

  • 1 large bunch collard greens
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • kosher salt
  • ground black pepper
  • 1/4 cup chicken broth

Directions

Wash the collard greens thoroughly. Remove the stems that run down the center by holding the leaf in your left hand and stripping the leaf down with your right hand. The tender young leaves in the heart of the collards don’t need to be stripped. Stack 6 to 8 leaves on top of one another, roll up, and slice into 1/2 inch thick slices.

Heat a large saute pan over medium high heat and add the olive oil. Once hot, add the garlic and red pepper flakes and saute until fragrant. Add the collard greens, and saute until bright green, about 4 minutes. Season with salt and pepper. Stir in the chicken broth and cook until the liquid evaporates, another 2 minutes.

This is a wonderful recipe! (At least to me it is) I grow a fair amount of greens in my garden. Mustards, Kale, collards and I have tried a number of different recipes to insure that they are flavored properly and also TENDER without being mushy. I have used the crock pot with limited success feeling that a slow cook would tenderize more and while it did unfortunately I left it in too long and it was mushy. Flavorful but mushy. I tried this particular recipe from Paula a couple of weeks ago and used my own chicken stock/broth and upped the other ingredients because I knew that I'd like it that and I was just amazed at how everything turned out with half the effort of any other recipe I had tried. Delicious! I'm going to do it again this evening to make sure that I just didn't get lucky. If you like greens you need to give this a shot. I don't think you'll be disappointed.

My CSA included a bunch of collard greens this week and I had no idea what to do with them. Recipe searches online brought back all sorts of fancy recipes but I didn't want to fancy recipe; I wanted my first time cooking collard greens to be straightforward. I found this recipe and made collard greens today and then came back here to create an account to tell you how totally amazing my collard greens turned out. I can't tell you the last time I was this excited about a green vegetable but I was actually disappointed that I didn't make more. I made one change to the recipe and that was for broth I substituted 4 cups of sodium free chicken broth. For all its simplicity, this is one of the best things to come out of my kitchen in a long time. I'm very glad I found this site and this recipe.
