Potato Cakes with Creamy Onion Potato Sauce

Ingredients
- 1/2 cup Vegetable oil
- 2 cups leftover mashed potatoes
- 1/2 cup all-purpose flour, divided
- 1 large egg, lightly beaten
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup panko (Japanese bread crumbs)
Directions
In a large skillet, heat oil over medium-high heat. IN a medium bowl, stir together potatoes, ¼ cup flour, egg, salt, and pepper. Shape mixture into 8 patties.
In a small bowl, whisk together bread crumbs and remaining ¼ cup flour. Dredge patties in bread crumb mixture to coat.
Fry patties until golden brown, 1 to 1 ½ minutes per side. Serve immediately with Creamy Sweet Onion Potato Sauce (recipe follows).
Creamy Sweet Onion Potato Sauce
Makes about 2 cups
1 cup diced sweet onion
1 cup mayonnaise
¼ cup sour cream
Salt, to taste
In a small bowl, stir together onion, mayonnaise, sour cream, and salt, and refrigerate until ready to use. Serve over potatoes. Garnish with parsley if desired.
