Peppermint Pie

Ingredients

  • 8 oz soft type peppermint candy
  • 1/2 cup plus 1 1/2 cups whipping cream, whipped whipping cream
  • 1/4 cup cold water
  • 1 envelope unflavored gelatin
  • 1 chocolate cookie crust

Directions

Soften gelatin in water, set aside. Put half cup whipping cream in small saucepan with candy and cook over low heat until candy melts. Add gelatin, mix well. Let cool and fold in whipped cream. Pour into crust. Chill.

I made this recipe several years ago and my daughter liked it so much that when I asked her, "What do you want for Dessert this Christmas?" (besides the pumpkin pie) she answered, "That great Peppermint Pie!" Easy, delicious and fun. Thanks, Paula
