Peach Cobbler

Ingredients

  • 1 ½ cups self rising flour
  • 1 stick butter
  • ½ cup water
  • 2 cups sugar, divided
  • 4 cups peaches, peeled and sliced
  • 1 cup milk
  • ground cinnamon, optional

Directions

Preheat oven to 350 °F.

Combine the peaches, 1 cup sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.

Put the butter in a 3-quart baking dish and place in oven to melt.

Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir.

Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon, if using. Batter will rise to top during baking. Bake for 30 to 45 minutes.

To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream.

It's very good if you do it right. ***Use SELF RISING FLOUR!!!! I didn't have enough milk, so subbed heavy cream, and I would personally double the peaches in this recipe. I used homegrown peaches-skin on. Served with Breyer's natural Vanilla-amazing. But, it is very good and very crowd pleasing. And EASYYYYYY

This cobbler was delicious. Took it to a family outing and there was not a crumb left. Topped it off with a scoop of Vanilla ice cream. So easy to make. This will be my go to cobbler from now.

I followed the recipe carefully, making sure I used self-rising flour and did not stir the batter after adding it to the pan. I baked the cobbler at 350 for 45 minutes. It had a nice golden color on the top but was more like a sponge than a crust. Maybe that was due to the teaspoon of baking powder which I added per Paula's video. Not what I had in mind, although it tasted great. What did I do wrong?

Peach Cobbler high altitude tips

Paula's Peach Cobbler was always my favorite recipe when I lived in NC...I now I live at 5000 ft above sea level.any tips to make my Peach cobbler bake properly? Thank you.

Yes here is her recipe using canned peaches:

INGREDIENTS

1⁄4 cup butter
1 cup sugar
3⁄4 cup self-rising flour
3⁄4 cup milk
1 (28 ounce) can peach slices in heavy syrup, undrained (or use fresh if available, see note)
cinnamon, for sprinkling (optional, use only with peach or apple cobbler)

DIRECTIONS

  • Preheat oven to 350 degrees.
  • Place butter in oven in a 2-quart baking dish to melt.
  • Stir sugar and flour together and mix well. Slowly add milk and continue to stir to prevent the batter from lumping.
  • Being careful not to burn yourself, remove hot baking dish containing melted butter from oven; pour batter directly over butter in baking dish (DO NOT STIR).
  • Spoon fruit on top of batter, then gently pour syrup on top (DO NOT STIR). Sprinkle with cinnamon, if using. The most important part of this dish is not stirring the mixture.
  • Bake for 30 to 45 minutes or until golden brown. Your batter will rise above your fruit, producing the most wonderful of crusts. Serve warm with vanilla ice cream or fresh whipped cream.

I noticed the video says 1 cup of water and the written recipe says 1/2 cup. Is his just personal preference for juiciness of cobbler?

At the end of the video, she says she didn't quite use a full cup and also that she prefers a juicier cobbler which is why she used more than the 1/2 cup the recipe calls for!

How much batter does this make?

It will make enough batter for 1 13x9 inch pan of peach cobbler, rising to the top of the pan during cooking.

Hey! Thanks for the quick response, but unfortunately I do not have a 13x9 pan. Only two 8x8's. Do you think that I could possibly divide the mix into two separate pans by any chance?

Yes, get the canned peaches in syrup and use the syrup instead of the sugar water! The batter will be gooier depending on how much liquid you use. Paula likes hers to be wetter and gooier, so she uses more syrup!
