Paula’s Pizza Dough

Ingredients

  • 5 cups all purpose flour
  • 2 packages active dry yeast
  • 2 tablespoons sugar
  • 2 tablespoons divided olive oil
  • 2 teaspoons salt
  • 2 cups warmed water

Directions

In a standing mixer with a hook attachment, place the warm water, yeast and sugar and 1 tablespoon olive oil. Allow to sit until yeast begins to foam. Add flour and salt and mix the dough until it is smooth and pulls away from the side of the bowl. Drizzle half of the remaining olive oil over the top of the dough. Turn the dough over in the bowl cover and allow it to rise to approximately twice it’s size. (about an hour)

Punch the dough down and pour out onto a lightly floured surface. Knead again. Place it back in a bowl and drizzle with the remaining olive oil. Turn over, cover and allow to rise a second time. After it has risen, punch it down again. It is now ready to roll out for your pizzas!

Makes two 16″ round pizzas

Have tried others but this one is the BEST! Makes 3 or 4 pizzas but we prefer very thin crust.

Just tried this recipe. Fantastic. No other pizza dough recipe for me, now. :) Thank you, Paula.

I always try new recipes until I find just the right one. After finding this recipe, I'm now done looking for a new pizza recipe!!! It makes two large pizzas, which is perfect, and the taste is the best. I roll them out on parchment paper, load it up with sauce and toppings, and use a round pizza pan just to transfer the pizza on parchment to the pizza stone. Using a pizza stone makes all the difference, too. 500 degrees on a pizza stone in the middle of the oven, for around 10-12 minutes, makes this dough cook up PERFECTLY!
