Oyster Dressing

Ingredients

  • 7 slices dried in warm oven white bread
  • 1 sleeve saltine crackers
  • 2 cups chopped celery
  • 1 large chopped onion
  • 8 tablespoons butter
  • 7 cups chicken stock
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon dried sage
  • 1 tablespoon poultry seasoning
  • 7- 5 for dressing, beaten, and 2 for cornbread eggs
  • 2 pints or 1 quart drained oysters
  • 1 cup self rising cornmeal
  • 1/2 cup self rising flour
  • 3/4 cup buttermilk
  • 2 tablespoons vegetable oil

Directions

Preheat oven to 350 degrees F.

To make the cornbread, combine cornmeal, flour, 2 eggs, buttermilk and oil and pour into a greased shallow baking dish. Bake for approximately 20 to 25 minutes. Remove from oven and let cool.

To make the dressing, crumble dried white bread slices, cornbread and crackers. Mix together and set aside. Sauté chopped celery and onion in butter until transparent, approximately 5 to 10 minutes. Pour over corn bread mixture. Add stock, mix well and add salt, pepper, sage and poultry seasoning. Add beaten eggs and mix well. Add oysters and mix. Pour into a greased pan. Bake for about 45 minutes.

I have prepared this for Thanksgiving for about five years.. It is so GOOD. My family loves it. Miss you on that network, Paula. It is not same without you.

Paula, I love your show, cooking has always been big in my family having 3 children and a husband with 4 men in the house they were big eaters. I recently loss my oldest son at the age of 24, in 2007. He was a Sheriff Deputy and a volunteer fireman. He died in his own house fire. I loss all reasons for going on. I didnt celebrate holidays, I didnt cook anymore, I just found it hard to go on. My other children tried to help me, and they did.. But I took a leave of absence from my work, afew years later, I started watching your show, the love you have for cooking and your family helped me so much. I found apart of me that I thought was lost forever. You are a wonderful person, and I so enjoy your show and will continue to watch it. Thank you Paula you helped me more than you know..I love all your receipes..
