Ooey Gooey Butter Pancakes

Ingredients
Liquid Gooey Butter Mix
- ¾ pound cream cheese, room temperature
- ¾ cup clarified butter, melted
- 1½ tablespoons powdered sugar
- 1½ teaspoons vanilla extract
Paula's Pancakes
- 2 eggs
- 1½ teaspoons vegetable oil
- 1 cup milk
- 1 pound self-rising flour
- ¼ cup sugar
- 1 cup buttermilk
- 1½ teaspoon vanilla extract
Ooey Gooey Butter Mix
- ½ pound unsalted butter
- 3 ounces cream cheese
- 2 ounces powdered sugar
- ¾ teaspoon vanilla extract
Directions
Liquid Gooey Butter Mix
In a mixer, whip the cream cheese and whip on low until it’s smooth.
Add in all the other ingredients slowly until they are incorporated and the mixture is lump-free.
Paula's Pancakes
Mix all ingredients in a mixer on low for 1 minute.
Place 3 ounces on a 350˚F skillet. As it cooks on the first side, place the liquid ooey gooey butter in a pinwheel configuration ont he pancake, then flip and cook the pancake on the other side.
Ooey Gooey Butter Mix
Beat the unsalted butter in the mixer using a paddle until the butter is soft.
Add the remaining ingredients and mix on medium speed until all ingredients are well incorporated. Beat the mixture on high for 5 minutes.
Serve with the pancakes.

I'm capable of adding the leavening myself and don't have any self rising flour.
To make 1 cup of self rising flour, use 1 cup of all-purpose flour with 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt!
