Olivia’s Buttermilk Pie

Ingredients

  • 1/3 cup melted butter
  • 1/2 cup biscuit mix
  • 1 cup buttermilk
  • 1 1/2 cups sugar
  • 1 teaspoon pure vanilla extract
  • 3 eggs

Directions

Preheat oven to 350 °F. Grease a 9-inch pie pan. Put all ingredients in a bowl and blend for 1 minute with a handheld electric mixer. Pour mixture into prepared pan. Bake for about 50 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes.

Great use for leftover buttermilk. I've made this twice and always get good comments on the flavor .

Can you make the mix the night before and store it in the refrigerator to cook the next morning?

It will only take an extra 5 or 10 minutes in the morning. Our recommendation would be to just do it all at once!
