I absolutely LOVE Paula's Old Fashioned Meatloaf. My rating for it is Stupendous! It is a huge hit with my finicky men and company too. I am making it for friends and it was a request from them to have it again. I have always used carrots in my meatloaf that was my mother's recipe and they hated the carrots in it. But to me meatloaf with carrots are a must until I was forced to go look for another recipe. I knew in my search Paula would never let me down. And she sure hasn't with this recipe. Paula Deen’s old-fashioned Southern meatloaf recipe will quickly become a tasty meal option for family dinners! Serve this meatloaf with buttery creamed potatoes and fresh green beans!

Cook time: 5 minutes

Ingredients
- 1 lb ground beef
- 1 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 lightly beaten egg
- 8 oz canned without juice diced tomatoes
- 1/2 cup quick cooking oats
- 1/3 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon mustard
Directions
Preheat oven to 375 °F.
Mix ground beef, salt, pepper, onion, bell pepper, egg, tomatoes and oats together well and place in a baking dish. Shape into a loaf.
Topping:
Mix ketchup, brown sugar and mustard and spread on loaf. Bake for 1 hour.

She mispoke in the video because the cookbook recipe states 375 degrees!
It always falls apart when I cut it, even after letting it set for 10-15 minutes. Help!

It may be overcooked! We recommend buying an oven thermometer to check the temp. You may also want to try adding an extra egg or some more breadcrumbs if the oven temp is not the issue.
Instead of using diced tomatoes.. can I use ketchup? If so, how much?

Either would work! Just be sure it's thawed completely before cooking or baking it.
