New Year’s Eve Champagne Punch

Ingredients
New Year's Eve Champagne Punch
- ½ cup water
- ½ cup sugar
- 1 (750-ml) bottle sparkling wine or Champagne, chilled
- 1½ cups white rum
- 1¼ cups pomegranate juice
- 1 large lemon, thinly sliced, for garnish
- pomegranate seeds, for garnish
- fresh mint, for garnish
- festive holiday ice mold

- fresh rosemary sprigs
- fresh mint
- fresh cranberries
Directions
New Year's Eve Champagne Punch
Make a simply syrup by combining the water and sugar in a saucepan. Bring to a boil, stirring until the sugar dissolves, before simmering 5 minutes. Let it completely cool.
Place the ice mold in a punch bowl, and pour in the Champagne, rum, and pomegranate juice. Add simple syrup to taste. Garnish punch bowl with sliced lemons, pomegranate seeds, and mint leaves.
Festive Holiday Ice Mold
Place fresh rosemary, cranberries, and mint in an ice mold or bundt cake pan. Fill with water, and freeze until set.
