Mashed Baked Potatoes, AKA Mashed Potato Casserole

Ingredients

  • 2 cups French-fried onion rings
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic salt
  • 1/2 cup sour cream
  • 1 (7.6 oz) package butter & herbed mashed potato mix
  • 1 cup Monterey Jack cheese
  • 4 cups frozen hash browns
  • 4 oz cream cheese
  • 1 stick butter
  • 2 cups water

Directions

Preheat oven to 350 degrees F.

Bring a pot of water to the boil and add the hash browns. Cook for 5 minutes and drain. In a large bowl, mix together the cooked hash browns, mashed potato mix, butter, cream cheese, jack cheese, sour cream, garlic salt, salt and pepper. Stir in the boiling water. Place in a greased 2-quart casserole dish. Bake for 35 to 45 minutes. Sprinkle the onion rings over the casserole and bake for about 5 to 8 minutes longer until onions are golden brown.

I have made this many times at home but while visiting my daughter-in-law looked up the recipe on this website. You made a critical error by leaving out the 2 cups of boiling water in the recipe directions! Too bad for those who follow these directions.

Paula, I saw magazine in a condo we stayed in this past week. I did not write the name down and now I'm so upset with myself--I can't remember. It had a recipe for hot pineapple coconut cake with warm pineapple coconut icing. The magazine was printed in 2006 and had both your sons on the cover with you. It also had a page with recipes for fried pork chops, Cracklin cornbread and one other thing I can't remember. All the recipes were given to you by friends. Can you possibly find the name for me or direct me to finding the recipes that were in the book. Thank you so much for your time, Merrie Youngblood

Love this dish, so do all the people I have made it for. I cook all the time, this is a great alternative to the famous yuk, cheesy potatoes. Love You Paula you are the best.
