Mango, Jicama, and Cucumber Salad

Ingredients

  • 3 tablespoons lime juice
  • 1/8 teaspoon chile powder
  • 4 (2) small yellow and (2) red/green, peeled and cut into 1/2 inch cubes mangoes
  • 1 medium peeled, seeded, and cut into 1/2 inch cubes cucumber
  • 1 medium peeled and cut into 1/2 inch cubes dash of cayenne pepper jicama
  • to taste salt

Directions

In a mixing bowl, combine the mango, jicama, cucumbers, cayenne, lime juice, chile powder and salt.

Toss well, cover and refrigerate for at least 1 hour before serving.

Can't wait until Summer garden vegetables are available to try this. I realize it takes a lot more work to have nutritional values for your recipes, but it sure would be nice!!
