Magical Peanut Butter Cookies

Ingredients

  • 1 egg
  • 1 cup or equivalent amount sugar replacement sugar
  • 1 cup creamy or crunchy peanut butter
  • 1 teaspoon vanilla extract

Directions

Preheat the oven to 350 °F. Grease a large baking sheet.

In a mixing bowl, combine the peanut butter, sugar, the egg and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar. Cool slightly before removing from pan.

If you want the cookies to be more durable try a teaspoon of corn starch mixed in with the sugar. Sometimes I add a little salt depending on what peanut butter I am using.

Do these cookies cause heartburn? Can peanut butter be replaced with almond butter?

Yes, you can replace the peanut butter with almond butter! As for the heartburn, we're unsure as different things cause heartburn for each person. Be sure to check with your doctor if it's a concern for you!
