Ingredients

  • 1 1/4 cups pecan pieces
  • 1 (10 inch) pre-baked pie crust
  • 1 cup light corn syrup
  • 2 1/2 cups divided brown sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon divided ground cinnamon
  • 6 tablespoons melted, plus 4 tablespoons for caramel unsalted butter
  • 1/2 cup heavy cream
  • 1 cup chopped for caramel pecans

Directions

Preheat the oven to 375 °F.

Put 1 1/4 cup pecan pieces in pre-baked pie shell. In a large bowl whisk the light corn syrup, 1/2 cup brown sugar, 3 eggs, vanilla extract, 1/4 teaspoon ground cinnamon and 6 tablespoons melted unsalted butter together until smooth. Pour the custard mixture over the nuts and bake the pie until the filling puffs and rises above the edges of the pie shell, about 30 minutes. Carefully remove the pie from oven and let it cool completely before serving. Drizzle the pie with Cinnamon Pecan Caramel and serve.

Cinnamon Pecan Caramel:

Mix the 2 cups brown sugar, 4 tablespoons butter, heavy cream, 1/4 teaspoon ground cinnamon and 1 cup chopped pecans together in a medium saucepan over medium heat. Cook until the sugar dissolves and the mixture is smooth.

I need help! When I took it out of the oven it was still jiggling a lot, even after it cooled. I cooked it a longer than 30 minutes. I put it in the icebox over night and it does not jiggle any more but I am a little concerned if it will hold its shape when cut. This is my first time to use the recipe and it is for a special dinner at church TONIGHT!! The recipe did not call for any flour to thicken the custard. Is this going to keep its shape? The mixture taste great. Sondra Davis

I would use HONEY instead of the corn syrup as it is SO bad for you....I probably would use 1/2 cup of honey tho.... They say corn syrup is the worst thing you can eat....I never buy anything with corn syrup in it and I always use honey in place of sugar no matter what I make.....

This p.pie is the best ever. From the south, and i have made different p.pies, but this one out tastes them all.its quick and easy...thank you for your wonderful recipe.

Caramel toppin will it become solid enough to slice the pie

Will the caramel topping become thick enough to slice after pouring it over the pecan pie?

The caramel is just drizzled on, not a thick topping, so it won't affect cutting!
