Loose-y Goose-y Salmon Croquettes

Ingredients

  • 1 tablespoon Olive oil
  • 1 can flaked canned salmon
  • 1 medium onion, diced
  • 1 small green pepper, diced
  • 1 tablespoon mayonnaise
  • 1 egg, beaten
  • 10 saltine crackers, crushed
  • 2 tablespoons panko bread crumbs
  • vegetable oil, for frying

Directions

Heat olive oil in a medium skillet. Sauté the onion and pepper until soft.

In a bowl, combine canned salmon, beaten egg, onions, peppers, mayonnaise, saltines, and panko crumbs. Form into patties.

In a separate bowl, mix 1 cup panko and ¼ cup flour. Dredge each patty in the panko and flour mixture.

In a medium skillet, heat vegetable oil until sizzling. Fry patties until golden brown, about 2 minutes on each side.
