Lighter Slow Cooker Smoked Pork, Lentil, and Sauerkraut Soup

Ingredients
- 2 (32 oz) containers reduced-sodium chicken broth
- 1 (16 oz) package rinsed and drained reduced-sodium sauerkraut
- 1 (10 oz) package sliced mushrooms
- 1 large chopped onion
- 2 chopped carrots
- 2 chopped celery stalks
- 1 cup rinsed and drained lentils
- 1 large chopped tomato
- 3/4 lb fully-cooked, trimmed and cut into 1-inch pieces boneless smoked pork chops
Directions
Combine the broth, sauerkraut, mushrooms, onion, carrots, celery, lentils, and tomato in a 5 or 6 quart slow cooker. Cover and cook until the lentils are tender, 4 toÂÂ 6 hours on high or 8 toÂÂ 10 hours on low. Add the pork chops during the last 30 minutes of cooking time and heat through.
