Lemon Blossoms

Ingredients

  • 4 large eggs
  • 1 (3.5 oz) package instant lemon pudding mix
  • 1 (18.5-oz) package yellow cake mix
  • 3/4 cup plus 3 tablespoons for glaze vegetable oil
  • 3/4 cup water
  • 4 cups confectioner's sugar
  • 1/3 cup fresh lemon juice
  • 1 zested lemon
  • 3 tablespoons water

Directions

Preheat the oven to 350 °F

Spray miniature muffin tins with vegetable oil cooking spray. Combine the cake mix, pudding mix, eggs, 3/4 cup oil and 3/4 cup water and blend well with an electric mixer until smooth, about 2 minutes. Pour a small amount of batter, filling each muffin tin half way. Bake for 12 minutes. Turn out onto a tea towel.

To make the glaze, sift the sugar into a mixing bowl. Add the lemon juice, zest, 3 tablespoons oil and 3 tablespoons water. Mix with a spoon until smooth.

With fingers, dip the cupcakes into the glaze while they’re still warm, covering as much of the cake as possible, or spoon the glaze over the warm cupcakes, turning them to completely coat. Place on wire racks with waxed paper underneath to catch any drips. Let the glaze set thoroughly, about one hour, before storing in containers with tight-fitting lids.

Note that the recipe calls for 18.5 ounce package of cake mix and 3.5 ounce package of lemon pudding. Due to ‘shrinkflation,” cake mixes are now 15 ounces and pudding is 3.4 ounces. So, the recipe isn’t incorrect. Just need to adjust the amount of mix upwards or other ingredients less.

This recipe is incorrect. Please DO NOT add 3/4 cups of water because you will ruin the texture. This recipe only calls for 3/4 cup of oil only. I have been making these for years and just noticed the error.

Not sure why people want to add the water. I made them with water and they came out differently. Had to throw them out.

These are fantastic. I am debating whether I prefer glaze just on top or complete blossom. Both are fabulous though! I have eaten so many just to decide ~ lol. I used 3 tablespoons water and 3 tablespoons vegetable oil. They came out so fluffy and popped right out of tin with original pam. I also decreased the temperature to 325. If you watch Paula's video on facebook she states 325 where the website recipes calls for 350. 325 worked great for 12 minutes on my oven. 5 stars for this one!

Where is the 3/4 cup water in the lemon blossom recipe?

I watched your video on Facebook for this recipe. You added 3/4 cup of water to your cake batter mixture along with 3/4 cup of oil. I don't see the 3/4 cup water in this recipe. I made this recipe today and added water and oil to the cake batter. They turned out great!

Gluten free alternative

Hi I have made these before and absolutely love them! I am having some guests over that have a gluten allergy and I am wondering if I could use a gluten free cake mix? Or would this likely change the entire consistency of the dessert? Any suggestions are greatly appreciated! Thank you! :)

We haven't tried it with this recipe, but it should be ok for the most part. Though you will likely notice a change in the flavor and texture. If you give it a try, please share your results with us!

Have you made adjustment to the Lemon Blossom recipe? The old one doesn't turn out right probably due to cake mix changes
They came out very crumbly and stick to the pan like glue. Everyone at work and Church dearly loved these. I even made them for my stepson's rehearsal dinner. Please help adjust this recipe.

As most cake mixes have gotten smaller, Paula has found that she really doesn't need to adjust the recipes. However, you can always buy two cake mixes and weigh them to get the exact weight specified in the recipe. Also, make sure you're greasing your pan at the start and applying the glaze after you've taken them out of the tins. Lastly, running a butter knife around the edges of each blossom before removing them from the pan should help!

Where do you find an 18.5 oz. yellow cake mix for the Lemon Blossoms? Do you have to buy 2 mixes?
All the cake mixes I find are 15.25 oz. I don't know whether to just use one mix, or buy 2 and weigh 18.5 oz.?
