Hushpuppies

Ingredients

  • 1 small chopped onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup self rising flour
  • 1 1/2 cups self rising cornmeal
  • 6 cups vegetable oil - or as needed for frying
  • 1 cup buttermilk
  • 1 lightly beaten egg

Directions

Using a large skillet, preheat oil for frying to 350 °F.

Using a mixing bowl, stir together the cornmeal, flour, baking soda and salt. Stir in the onion. In a small bowl, stir together the buttermilk and egg. Pour the buttermilk mixture into the dry ingredients and mix until blended. Drop the batter one teaspoon at a time into the oil. Dip the spoon in a glass of water after each hush puppy is dropped in the oil. Fry until golden brown, turning the hush puppies during the cooking process. Makes about 3 dozen hush puppies.

Absolutely the best hushpuppie ever!!!! I have probably made these 25 times. My guests always love them. Easy and just sooo good!!

These were wonderful! I had never made hushpuppies before and of course the recipe was easy to follow and they came out perfect. Kids and husband were impressed with my skills! Thanks Paula

What if I don't have any self rising flour or buttermilk?

What if I don't habe any self rising flour or buttermilk.?  I think I know but some one else might not and I am not positive.

You can make your own buttermilk. To make 1 cup of buttermilk, put a tablespoon of vinegar into a 1-cup measuring cup and fill the rest of the way with regular milk.

You can also make your own self-rising flour. Just mix together thoroughly 1 cup of all-purpose flour, 1½ teaspoons of baking powder, and ¼ teaspoon of salt.
