Ingredients
Pork Loin
- 1 (3-pound) pork loin
- 1 tablespoon olive oil
- 1 teaspoon dried basil
- 1 teaspoon sweet paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried thyme
- ½ teaspoon dried rosemary
- salt, to taste
- freshly ground black pepper, to taste
Honey Glaze
- 4 cloves garlic, minced
- ¼ cup honey
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
Directions
Pork Loin
Preheat oven to 375˚F.
Combine all seasonings and spices together in a small mixing bowl.
Pat dry pork loin, then spray with cooking spray before rubbing it all over with the spice mix.
Heat the oil over medium heat, and sear the pork about 3 to 5 minutes on each side, until nicely browned. Remove from the pan and place on an aluminum foil-lined baking sheet, with the fatty side up.
Brush the honey glaze over the pork loin, and roast. After 25 minutes, tent foil over the pork and roast for another 25 to 30 minutes, or until the pork’s internal temperature reaches 145˚F. Remove, and let rest for 10 minutes before serving.
