Paula, I have watched and re watched your shows since Day One. I adore them and have all of your cookbooks! I grew up in Kentucky and was raised on Southern Food and adore all of it! Just want to tell you I know that a lot of it is very high in calories, fat and carbs, but over the years I have adapted many recipes and made them lighter and healthier, but still get the same "kick" from them. I have always tried to avoid sweetened beverages and almost live on "plain", unsweetened iced tea with some mint leaves added in the brewing. Almost never drink sodas as they are completely empty calories and carbs and the diet stuff is full of poison in my opinion.I always go for the low fat or no fat versions of dairy products and look to chicken breasts, pork tenderloin, ground turkey, fish and seafood, vegetarian, oven fried recipes, increased herbs, spices, lemon juice or zest as I lower the salt. I am an RN who does a lot of counseling of diabetic patients. It takes some thought and planning as to what goes into your mouth and it also takes activity each and every day to make our bodies healthy and to fight diabetes, but it is actually fun and challenging and doable! I love you and your family (actually hugged Bubba once at his restaurant)and wish you nothing but love and grace as you deal with your diabetes. You can do it!
