Grits

Ingredients

  • 2 cups water
  • 1 1/4 cups milk
  • 1 teaspoon salt
  • 1 cup (not instant) quick cooking grits
  • 1/2 cup butter

Directions

In a small pot, bring water, milk and salt to a boil. Slowly stir grits into boiling mixture. Stir continuously and thoroughly until grits are well mixed. Let the pot return to a boil, cover pot with a lid, lower the temperature, and cook for approximately 30 minutes stirring occasionally. Add more water if necessary.

Grits are done when they have the consistency of smooth cream of wheat.

Serve with butter, fruit or savory with a meal.

Simply amazing. I grew up in MS and did not like grits at all, even after mom tried to entice me by sprinkling sugar on top while everyone else had salt, pepper and butter. However, as an adult at 31, I wanted to try grits again and cook them as perfectly as my mom cooked them on the wood stove heater. This recipe is amazing, just like mama's. Now, I can say I love grits and can proudly say I am a MS girl who can cook up some good grits thanks to this recipe. . Ms. Paula, you are MY godmother...you just don't know it, until now. Muah!!!

So THAT'S the difference between Wanda Thompson's grits and mine! Thanks for sharing such a simple recipe that's simply good! Amazing how a simple food can trigger a good memory. Grits bring a funny memory to us each year as we celebrate our anniversary - 35 and counting! Thanks, again
