Green Eggs and Ham Cups

Ingredients

  • 8 slices thinly sliced deli ham
  • 1 divided into 4 pieces slice sandwich bread
  • 4 eggs
  • 1 cup thawed and squeezed dry frozen spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup white cheddar cheese
  • 4 slices toast
  • 4 slices bacon

Directions

Preheat oven to 400º

Lightly coat 4 cups in a muffin tin with cooking spray. Fit two of the ham slices into each cup (ham ends will be above cup edges). Divide bread among cups. In a blender, combine eggs, spinach, salt and pepper and blend. Divide mixture among cups. Sprinkle with cheese. Bake on middle oven rack until egg is cooked. Approximately 15-20 minutes. When warm enough to handle, remove the cups from the muffin tins and serve with a slice of toast and crispy bacon.

Love this recipe, but could you please include nutritional info? I am a member of Weight Watchers and have lost 108 lbs, so I need nutrition info in order to calculate my points plus values. I can probably calculate it using the ingredients but would love to have both.

Can these be baked in a toaster oven? If so, is the baking times the same? My oven doesn't always "cooperate" so I tend to rely on the toaster oven. Also, I'm usually only cooking for one, so I hate to fire up the oven unless I'm making a big meal.

This looks really yummy! Very different from the literal GREEN eggs we make for our grandkids! ;-)
