Grandma Paul’s Caramel Corn

Servings: 5

Ingredients

  • 1 cup butter
  • 2 cups packed brown sugar
  • 1 teaspoon salt
  • 1/2 cup light corn syrup
  • 1 teaspoon baking soda

Directions

Over medium heat, combine first four ingredients and boil for 5 minutes. Remove from heat; stir in baking soda. Stir well. Pour over 8 quarts popped corn. Stir to coat well. Bake in large roaster or pan at 200 °F for 1 hour, stirring every 15 minutes. Spread on waxed paper to dry. Yields about 8 quarts.

While the mixture is still warm, shape into balls to make caramel popcorn balls. Make sure to butter your hands first! Act quickly! When cooled, wrap each ball in plastic wrap tied with ribbon!

I made this caramel corn on a whim (had never made caramel corn before) and took it to work. It was a huge batch (to which I added pecan halves ... heavenly!) and it disappeared quickly. They keep asking me when I will bring more in. I want to do it, but find I am too tempted to eat way too much of it. Great recipe (and remember the pecans; they are great with the glaze of caramel on them)! Kudos Paula!!
