Ingredients

  • 1 sleeve saltine crackers
  • 1 large finely chopped tomato
  • 3 finely chopped green onions
  • 1 1/2 cup mayonnaise
  • 1 finely chopped hard boiled egg

Directions

In a medium size bowl, crush the crackers, add all of the ingredients, mix well, and serve immediately.

There is absolutely no reason that this recipe should taste good, but in the middle of the night I watched Paula make it in her kitchen and was mesmerized. I had most of the ingredients in my pantry so made a single serving version with just slight variations (used the whole egg for a single serving, reduced the mayonnaise although it is my favorite condiment and substituted Vidalia onions for the green onions). I ate the whole thing and will definitely make it again. (It reminds me of a cornbread recipe that has tomatoes, onions, mayonnaise and pickle relish on it.) Loved it! Thanks, Paula!

I loved watching you make this salad. You have the best voice, talent, and personality! :) This was a great starter salad recipe! I chopped celery, cabbage, red bell pepper, avocados, and white onions. Only had ritz crackers and added a total of 3-boiled eggs. Outstanding! Thank you Paula for all your wonderful recipes!
