Fruitcake Drop Cookies

Ingredients

  • 3/4 cup sugar
  • 1/4 cup at room temperature unsalted butter
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1 1/2 cups all purpose flour
  • 1/2 cup candied red cherries
  • 1/2 cup candied green cherries
  • 1 cup dried pineapple pieces
  • 2 cups roughly chopped pecans

Directions

Preheat oven to 300 °F.

In a large bowl, cream together butter and sugar using a hand mixer. Add eggs, salt, vanilla, lemon and cinnamon and mix until well incorporated. Slowly add flour and mix well. Fold in fruit and pecans. Drop by rounded tablespoonfuls onto a greased cookie sheet. Bake for 23 to 25 minutes. Allow to cool completely.

After trying many recipes for fruitcake cookies I found your recipe! This is the cookie I had at a party many years ago. It is so very delicious. The texture and taste are delightful, and they are so pretty. I followed the recipe exactly and everyone loved them.

These were delicious! For the last few years I have tried various recipes for fruitcake cookies like one I tasted many years ago. These cookies were the ones! Very sweet and a nice chewy texture. It does not have a heavy taste like some fruitcake does. These are just right. Thanks so much Paula!

These did not come out for me. I wish the recipe would have specified to chop the cherries. Weird texture. As an experienced baker, this was a complete waste of (expensive) ingredients. Take another look at this recipe, Paula. This is the first of many of your recipes I've made that has been less than perfect.
