This creamy, dreamy fruit tart recipe looks beautiful and tastes divine. It’s decorated with fresh strawberries, blueberries, raspberries and kiwi. You’ll make the dough for the crust and the sweet cream cheese and vanilla filling from scratch.

Difficulty: Easy

Prep time: 15 minutes

Cook time: 15 minutes

Servings: 15

Ingredients

  • 1/2 cup confectioner's sugar
  • 1 1/2 cups all purpose flour
  • 1 1/2 sticks softened and sliced unsalted butter
  • 1 (8 oz) package softened cream cheese
  • 1/2 cup plus 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • fresh for topping: strawberries, kiwi slices, blueberries, raspberries fruit
  • 1 (6 oz) can thawed frozen limeade concentrate
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lime juice
  • for garnish whipped cream

Directions

Preheat the oven to 350 °F.

For the crust: In a food processor, combine the confectioner’s sugar, flour and butter, and process until the mixture forms a ball. With your fingers, press the dough into a 12-inch tart pan with a removable bottom, taking care to push the crust into the indentations in the sides. Pat until the crust is even. Bake for 10 to 12 minutes, until very lightly browned. Set aside to cool.

For the filling and topping: Beat the cream cheese, sugar and vanilla together until smooth. Spread over the cooled crust. Cut the strawberries into 1/4-inch slices and arrange around the edge of the crust. For the next circle, use kiwi slices. Add another circle of strawberries, filling in any spaces with blueberries. Cluster the raspberries in the center of the tart.

For the glaze: Combine the limeade, cornstarch, lime juice and sugar in a small saucepan and cook over medium heat until clear and thick, about 2 minutes. Let cool. With a pastry brush, glaze the entire tart. You will not use all of the glaze.

Keep the tart in the refrigerator. Remove about 15 minutes before serving. Slice into 8 wedges and serve with a dollop of whipped cream.

I am completely obsessed with this fruit tart! The recipe is so user-friendly and easy to make with simple ingredients! I made this fruit tart for the first time for Easter brunch and my family lost their minds! They couldn’t believe it was made from scratch. The tart is delicious and the lime glaze is so unique and helps to cut the sweetness! I’ve made this tart a few times now and it’s such a winner at every gathering!

I’ve been making this fruit tart recipe from Paula for years. It‘s a party and family favorite. It’s so delicious, beautiful and can be wonderfully different depending on the fruit. So much better than the store bought and always gets rave reviews. Love it!!

Options for regular tart dish.

Love you Paula!

I dont have a removable bottom tart pan. Is there anything I can do inorder to get the shell to come out any easier when using my regular tart dish?

We recommend removing the tart from the tart pan before filling it (you might try flipping it). However, you'll want to make sure it's completely cooled before doing so.

Yes, though we would recommend freezing it instead!
