Foolproof Standing Rib Roast

Ingredients
- 1 tablespoon Paula Deen's House Seasoning
- 1 (5-lb) standing rib roast
Directions
Preheat oven to 375 °F.
Allow roast to stand at room temperature for at least 1 hour. Rub roast all over with the House Seasoning. Place roast on a rack in a pan with the rib side down and the fatty side up. Roast for 1 hour. Turn off oven. Leave roast in the oven but do not open oven door for another 3 hours. About 30-45 minutes before serving time, turn oven to 375 °F to reheat the roast.
Cook’s Note: Do not remove roast or re-open the oven door from the time roast is put in until ready to serve.

The recipe should work out for any size! But you can get a ovenproof thermometer to gauge what temp the meat gets to your liking!
We need ours to be more done (medium to medium well), but cutting it in half doesn't work well for our needs. Should we increase the initial cook time or the reheat time (or both)?
The reheat will give you the most accurate level of doneness. YOu can use an oven proof meat thermometer to read the temp of the meat without having to open the door!
Are there any other changes to the time to roast two 5-pound standing rib roasts together according to your Paula Dean recipe?

Can you please give me cooking info for a small 2.5 lb prime rib roast. I made the 5lb roast at Christmas and it was to die for!

Paula said the recipe works for any size roast!
Does the depth of the pan really matter? What if you dont have a wire rack to go in the pan?

You can just use your largest pan but the wire rack is recommended so the bottom of the meat doesn't get soggy.
How long do I cook a 5 rib 14.39lb boned and Tues rib roast? I don't want it to be too rare. Thanks!

You would want to cook it exactly as she does but put a digital thermometer that you can check without opening door to your desired doneness!
