Date-Nut Sticks

Ingredients

  • 1 1/2 sticks butter
  • 2 eggs, beaten
  • 2 cups sugar
  • 1 (8 oz) box dates, chopped
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped
  • 1 1/2 cups crispy rice cereal
  • 3 cups finely grated coconut

Directions

In a saucepan over medium heat, melt butter. Add eggs, sugar and dates. Bring to a boil, reduce heat to low, and cook 10 minutes, stirring constantly. Remove from heat. Stir in vanilla, nuts and crispy rice cereal. Cool and shape into finger-sized sticks. Roll in coconut. Makes about 45 sticks

I have a question regarding your recipe for "Date Nut Sticks". It's one of my favorite Christmas recipes but I have a question. What's the secret to getting the coconut to stick to the Date Nut Sticks. I've tried doing it when the sticks are still warm and I've tried waiting until they are cool and I cannot get the coconut to stick. What am I doing wrong? Thanks.
