Crispy Prosciutto Broomsticks

Ingredients
- 12 slices prosciutto, halved diagonally
- 24 long thin crisp breadsticks (we used Alessi Thin Breadsticks)
- 1 (1-ounce) package fresh chives
Directions
Preheat oven to 375°F. Line baking sheets with parchment.
Wrap one piece of prosciutto around bottom-fourth of each breadstick to create a triangle shape at one end. Using kitchen shears, make thin vertical cuts into prosciutto to resemble bristles of a broom. Place on prepared pans, and cover breadsticks with aluminum foil, leaving prosciutto ends exposed.
Bake for 10 to 12 minutes or until prosciutto is crisp. Remove from oven, and let cool for 10 minutes. Tie a chive around prosciutto, and trim excess.
Cook’s Note: If you’re having trouble tying the chives, try steaming or blanching them in boiling water to soften them.
