Creamy Peas and Ham

Ingredients
- 4 tablespoons mild goat cheese or low-fat cream cheese (Neufchâtel)
- ¼ cup milk
- 1 teaspoon dried minced onion
- 1 (10-ounce) package frozen peas, thawed
- 2 ounces ham, cut into ¼-inch chunks (about ⅓ cup)
- salt, to taste
- freshly ground black pepper, to taste
Directions
In a medium saucepan over medium heat, bring the goat cheese, milk, and dried onion to a simmer and cook, stirring, until the cheese is completely melted. Add the peas and ham and cook, stirring, for 3 minutes, until heated through. Season to taste with salt and pepper. To thicken up the sauce a bit, let it stand for 3 minutes.
