Courtney’s Get Fixed Super Sunday Dip

Ingredients

  • 2 lbs poached and shredded boneless skinless chicken breasts
  • 1/2 cup hot sauce
  • 1/2 cup blue cheese dressing
  • 4 oz grated cheddar cheese
  • 4 oz grated Monterey Jack cheese
  • 4 oz crumbled blue cheese

Directions

Preheat oven to 350º.

In a medium mixing bowl, stir together the hot sauce, dressing, cheddar cheese and Monterey Jack cheese just until combined. Salt and pepper to taste. Gently fold in the shredded chicken and pour mixture into a casserole dish that has been sprayed with a non stick cooking spray. Top with blue cheese and bake until cheese is melted and bubbly (approximately 30 minutes). Serve with tortilla chips or a crusty bread.

To Sue Nickel - I have made Queso using cheddar & monterey ; just make a thin white sauce and add the cheddar and jack cheeses to it (along wiht whatever spices etc you want)

I dearly love you Paula and watch you whenever I can. You are a beautiful person inside and out. Would love you to answer a question for me! I have always loves chili con queso but I now don't like velveta cheese any more. What kind of cheese can I use as a substitute that is smooth melting? I have tried several kinds and one was so lumpy that I had to throw it out. If you can find the time to answer me I would be so thankful to you. Love and friendship to you, Sue Nickel

I made this recipe as instructed and then one with ranch substituted for the blue cheese dressing (and omitting the blue cheese crumbles). Both options were a hit at our Super Bowl party.
