Corn, Avocado, and Tomato Salad

Ingredients

  • 1 pint halved cherry tomatoes
  • 1 diced into 1/2 inch pieces avocado
  • 2 cup cooked fresh or frozen corn
  • 1/2 cup finely diced red onion
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon grated lime zest
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

Combine the corn, avocado, tomatoes and onion. In a large glass bowl, mix together the dressing ingredients in a glass bowl. Pour over the salad and toss gently to mix.

I have been making this recipe since Paula made it on her TV show. I look forward to using fresh ingredients from my garden to make it every summer. I use all the ingredients she calls for. FANTASTIC

The Corn/Avocado/Tomato salad is one of my favorite "go-to" summer salad recipes! Great with grilled corn too. I alter the recipe a bit with the addition od one finely diced fresh jalapeno pepper..adds a bit of a kick, and I love it!!
