Chocolate Cheese Fudge

Servings: 6-8

Ingredients

  • 1/2 lb sliced or cubed processed cheese
  • 1 cup butter
  • 1 teaspoon vanilla extract
  • 1 cup chopped, pecans and/or walnuts nuts
  • 2 (16 oz) boxes confectioner's sugar
  • 1/2 cup cocoa

Directions

Spray lightly the bottom of a 9×2 inch square pan with a nonstick spray.

Using a saucepan over medium heat, melt the cheese and butter together, stirring constantly until smooth. Remove from heat and add the vanilla and nuts.

In a large bowl sift together the sugar and cocoa. Pour the cheese mixture into the sugar and cocoa mixture and stir until completely mixed. The candy will be very stiff.

Using your hands, remove candy from bowl and press evenly and firmly into pan. Because of the amount of butter in this recipe, pat the top of the candy with a paper towel to remove the excess oil. Place pan in refrigerator until candy is firm.

To serve candy, cut into squares.

This fudge, as strange as it sounds, is simply delicious! Best fudge I've ever had. You don't taste the Velveeta. The fudge comes out so rich and delicious, and just melts in your mouth.

Is this fudge best stored room temp? Or fridge? Does the cheese make a difference in that part?

It does not need to be refrigerated!

Can you use a mixer? I have arthritis in my hand.

It's an incredible thick consistency. If you do use a mixer, be sure to do it on the lowest setting so as not to overmix it. Also, towards the end, you may need to use your hands to finish it up and make sure it's well combined. Enjoy!
