Cheesy Shrimp Dip

Ingredients

  • 1/4 cup butter
  • 2/3 cup chopped red bell pepper
  • 1 lb peeled, deveined, and coarsely chopped medium fresh shrimp
  • 1/3 cup sliced green onions
  • 1 cup sour cream
  • 1 cup shredded parmesan
  • 1 cup shredded mozzarella
  • 1/2 cup mayonnaise
  • pinch of salt
  • pinch cracked black pepper
  • for serving assorted crackers

Directions

Preheat the oven to 350 degrees F.

In a medium skillet, melt the butter over medium heat. Add the red bell pepper and cook for 3 minutes. Stir in the shrimp and green onions and cook until the shrimp are pink and firm, 2 to 3 minutes. Stir in the sour cream, cheeses, and mayonnaise. Add the salt and pepper, to taste. Spoon the mixture into a 2-quart baking dish. Bake until lightly browned and bubbly, 30 to 35 minutes. Serve with assorted crackers.

I made this dish as described with one change: I seasoned the shrimp with a heavy sprinkling of Paul Prudhomme's Seafood Magic. This is one of the most amazing dips I've ever had. I got the best compliments on this dish and will be 100% making it again.

I have a question, I make these every year at Christmas and it's AMAZING !! I freshly grate the cheese and measure everything BUT it separates when baked. Any suggestions ?? This is a family HIT

Mix an egg yolk with the mayonnaise. It’s an emulsifier and stops the separation.
