Cheesy Grits

Ingredients

  • 3 1/4 cups whole milk
  • 1 cup quick cooking grits
  • 1/2 stick butter
  • 1/4 cup grated cheddar cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • for serving bacon crumbles

Directions

In a medium saucepan, bring the milk to a boil over medium-high heat.

Add the grits, 1/2 teaspoon of salt, 1/4 teaspoon of pepper and the butter. Cook and stir frequently, until the grits are soft.

Stir in cheese and bacon.

I wanted to tell Paula thank you for sending me a gift when I retired from the Air Force after 21 years. I gave her a "cheesy" kudos at time marker 2:34 (see included link below).

I started doing my Airman Cave Archives episodes after my Dad passed away from cancer unexpectedly (I included a link to the episode where I talk about one of our shared stories). One of the biggest regrets I have is not being able to hear him tell the tales of all the crap he collected over the years. I have several boxes of his things and wish I knew the significance behind the item. For this reason, I wanted to tell the stories behind my stuff so my four kids could know why I kept something. I could have just done a book or personal videos but figure if anything were to happen (house fire/theft) the tales would live on in the digital realm.
