Cheesy Chicken & Rice Casserole

Ingredients

  • ¼ cup unsalted butter
  • 1½ cup chopped sweet onion
  • 1 cup chopped red bell pepper
  • 3 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 cup chicken stock
  • ½ cup dry white wine
  • ¼ cup heavy whipping cream
  • 1½ cups Freshly grated Parmesan , divided
  • 1 teaspoon Kosher salt
  • ½ teaspoon poultry seasoning
  • ½ teaspoon ground black pepper
  • 3 cups shredded rotisserie chicken
  • 2 cups cooked long-grain rice
  • 1½ cups frozen peas
  • ¼ cup chopped fresh parsley
  • chopped fresh parsley, for garnish

Directions

Preheat oven to 450°.

In a large skillet, melt butter over medium heat. Add onion, bell pepper, and garlic. Cook until vegetables are tender, about 3 minutes. Whisk in flour; cook, whisking constantly, for 1 minute. Gradually whisk in stock, wine, and cream; bring to a boil. Reduce heat to medium-low; stir in 1 cup cheese, salt, poultry seasoning, and pepper until cheese is melted and sauce is thickened, about 5 minutes. Stir in chicken, rice, peas, and parsley. Spoon mixture into an 11×7-inch baking dish. Sprinkle with remaining ½ cup cheese.

Bake until bubbly and lightly browned, about 25 minutes. Let stand for 10 minutes before serving. Garnish with parsley, if desired.

I followed the recipe to a T with one optional exception and that is I added a cornflake and melted butter topping. This recipe is delightful and I would serve it to company - it's that delish! Thank you, Paula!

Hi, I made this casserole tonight for my husband and I. He was so happy and loved it so much. I would HIGHLY recommend this recipe. I also social distance a portion to my neighbour! lol. I forgot to take a picture until I had ours served.

Substitution?

Can I use Ozro in this instead of rice?

It should be able to sub out fine but you may need to keep checking the pasta to make sure it is done!

Yes but orzo cooks quicker so you may want to test it slightly before the regular cooking time!

Pan used in video.

In Paula's video she made this in a two handled skillet/fry pan on the stove top and then she baked the casserole in the same pan at 450 degrees. What pan was this?! All of the pans I have found indicate oven safe to 350 degrees and she baked this at 450 degrees for 25 minutes. Very interested in tracking down the pan she used for this dish to go from stove top, to oven, to tabletop! Thank you!!

Ugh! I forgot to cook the rice first!!!

What do I do? Start over? Will it be ok to eat if rice is uncooked then baked?

Uncooked rice can take hours to cook in a casserole unless it contains boiling liquid and is covered. That said, we don't think there's enough liquid in this to cook it safely, and eating undercooked rice isn't good for you!

do you cook 2 cups of raw rice or measure 2 cups after it is cooked

Can this casserole be frozen?

Yes, it should be fine to freeze both before cooking after after. If you're freezing it to make ahead, prep as normal, and add the cheese topping after unfreezing and before baking. If you're freezing the leftovers, it may not hold up quite as well but should be fine!

Can you use cheddar cheese and chicken broth instead?

Yes, you can substitute chicken broth for white wine. And you can use cheddar cheese, yes, but it may change the consistency just a bit!
