Cheater’s Fries with Cajun Seasoning

Ingredients

  • 3 large russet potatoes
  • 3 tablespoons olive oil
  • Cajun seasoning
  • salt

Directions

Prepare a grill to medium-high heat.

Cut the potatoes into steak-sized fries. Blanch them in boiling water for 2 to 3 minutes. Submerge in an ice bath to stop the cooking. Dry the potatoes and coat with the olive oil. Grill until the fries are crispy and golden, 15 to 20 minutes. Season with Cajun seasoning and salt, to taste. Serve hot.

Paula - Your picture holding the chicken reminded me of time with my Grandmother. She called this chicken a "Dominecker". I'm not sure how she would have spelled it but she said it like I wrote it. I loved spending time at my Grandmother's house. She had a woodburning cook stove, no running water, an outhouse and we carried water from the rain barrel to heat for a bath. We took our bath in ber galvanized washtub. I wouldn't change my memories but looking back wish she hadn't had to work so hard. She never complained. Thanks for the memories.
