Carrot, Zucchini, Squash Ribbons

Ingredients

  • 2 large peeled carrots
  • 3 large peeled zucchini
  • 3 large peeled yellow squash
  • 2 tablespoons butter
  • 2 cloves minced garlic
  • 2 tablespoons minced fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 juiced lime

Directions

Cut carrots, zucchini, and squash into thin ribbons with a mandoline slicer.

In a large skillet, melt butter over medium-high heat. Add garlic and cook for 2 minutes. Add carrot ribbons. Toss in zucchini and squash ribbons, salt, pepper, parsley and lime juice. Cook for 6 to 10 minutes.

Would like a recipe for shredded zucchini with some kind of crust on top of the zucchini. thank you so much and I hope you are back on the air soon.

I make this often!! It's so easy , pretty and yummy! My tip is to start cooking the carrots first, then after a few minutes, add the squashes; otherwise, the squash will be overdone by the time the carrots are softened! :)
