Captain Jim’s Lobster Casserole

Ingredients

  • 1 stick unsalted butter
  • 1 cup sliced mushrooms
  • 1 sleve crushed saltine crackers
  • 1 minced onion
  • 1 cup cut into chunks asparagus
  • 4 ounces drained pimento
  • 1 cup frozen peas
  • 8 ounces cut into chunks Velveeta
  • salt and pepper
  • 2 cups 1 inch pieces lobster meat
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk

Directions

Preheat oven to 350 degrees.

Make a roux with flour and butter. Add 2 cups milk. Add in Velveeta. Add in vegetables and pimento. Add in lobster.

Put lobster mixture in a greased casserole dish.

In a separate pan, melt stick of butter. Add crushed crackers. Add in onion. Place over casserole dish.

Bake about 30 minutes.

OMG!!!this looked so good , I just wanted to go right through the computer monitor...I have missed you Ms. Deen to no end...I do not watch the "food Network" any more...it is not the same without you...so I signed up and I am so glad I have. Amazing recipe..Thank you
