Bubba’s Key Lime Pie

Ingredients

  • 5 tablespoons melted butter
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup slivered almonds
  • 2 egg yolks
  • 2 teaspoons grated lime zest
  • 1/2 cup key lime juice
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup heavy cream
  • 1/4 cup sugar

Directions

Preheat the oven to 350 °F.

For the crust, combine ingredients and pat down into a 9-inch pie pan. Bake for 5-10 minutes.

In a medium bowl, beat 2 egg yolks. Add condensed milk, key lime juice and zest. Blend together.

Pour filling in crust and bake for 15 minutes.

Refrigerate pie overnight before serving to let set.

To make sweetened whipped cream, slowly add sugar to heavy cream while beating, taking speed up as the mixture thickens.

This is the best key lime pie! I make it for friends and family and everyone loves it. I use bottled juice ("Nellie & Joe's" brand) and zest from regular limes. The almonds in the crust really make it special! I don't change a thing. It's so easy that I'm actually embarrassed when asked for the recipe. Paula, thank you for a perfect pie.

For all you have trouble with the recipe ingredients: Copy & Paste to a Word Document. You can then move/separate the ingredients so that the crust is one paragraph, the filling another, etc.. It always works! I print recipes this way deleting the picture--in this case, the slice of pie. I have two binders of Food Network recipes. When a friend asks me for the recipe, I send the file by email to them.
