Brown Sugar Cookies

Ingredients

  • 1 cup at room temperature butter
  • 2 cups packed brown sugar
  • 2 tablespoons vanilla extract
  • 2 eggs
  • 2 cups self rising flour
  • 2 cups chopped walnuts or pecans

Directions

Pre-heat the oven to 375 °F.

In a bowl, cream the butter and sugar, then beat in the vanilla. Add the eggs one at a time, beating well. Add the flour 1/2 cup at a time, continuing to beat. Stir in the nuts.

Drop the dough by heaping tablespoon onto ungreased cookie sheets. Bake for 10 to 12 minutes, until golden brown.

Variation: For variety, you may want to add chocolate chips or coconut flakes. Sometimes I add both, depending on my mood.

These were very easy to make. I made my own self-rising flour with flour, salt, baking powder. Found the recipe on Allrecipes.com. It would be great if a recipe for that would be with the recipe though. So far so good. They are tasty. I baked them for 9 minutes with parchment paper on the cookie sheets.

These have nice flavor but were very hard to get off my baking sheet. I had 4 baking sheets already set to go into the oven so it was too late to take the soft dough off and put parchment down. .It was a mess. I had to scrape many of them off and we will crush them up for ice cream topping. I suggest using parchment paper. I did that with my last 2 sheets and no problems with breakage.

My mom use to have a recipe for Brown Sugar Cookies. She's lost it and I have searched for it for years in cookbooks and the internet. Her's called for buttermilk, tho' and was chewy. Had a distinct flavor. She'd gotten it form her neighbor, whose husband was Air Force and they'd been stationed out in Oklahoma or around that area, way back in the 50's. Would love to be able to find that recipe. Thanks so much and I have faithfully stood by you and now Phil Robertson. Love you guys so much.
