Brown Rice

Ingredients

  • 1 stick margarine
  • 1 small onion
  • 2 cans beef consomme
  • 1 cup rice

Directions

Cut onion into small pieces. Chip margarine over onion, add rice, then consomme. Bake, covered, in a 350 °F oven for 1 hour.

A variation of this recipe has been in my family for YEARS! We don't put onion in ours (one less step!) and you really don't have to 'chip' the butter. We just put the whole stick in the dish, put the rice and the consommé, cover and bake for about 45 minutes at 350. We call it 'Favorite Rice' because it's, well, our FAVORITE!! Goes well with absolutely everything!

My mom used to make almost this exact recipe with the exception of sautéing the onions and then mixing the rice into the hot pan for a few minutes before transferring to the buttered up baking dish! I love this!
